Basic Poultry Rub

  • 1 T Black Pepper, medium Grind
  • 1 T White Pepper Fine Grind
  • 1 ½ Tsp Cayenne 40 hotness
  • 2 T Garlic Powder
  • 2 T Onion Powder
  • ¾ Tsp Finely ground Bay leaves
  • ¾ Tsp File powder
  • 2 T Sweet Basil
  • 1 T Paprika Minimum 140 ASTA

Alternate additions…

If you are using the orange/onion stuffing, then add to the above recipe, 1 tsp orange rind… OR If you like a drier and crispier skin add 2 T salt.. NON-IODIZED! If you use the 1 tsp orange rind, then you should use the orange based, basting sauce.
